Carrot and Feta Salad

  • 1 medium carrot

  • 1 tablespoon roughly chopped fresh coriander

  • 2 teaspoons olive oil

  • 1/2 teaspoon honey

  • Pinch of salt

  • Juice of 1 lime

  • 1/4 cup crumbled feta cheese

Follow these simple steps:

  1. Grate and Gather: Begin by peeling and grating the carrot.

  2. Whisk the Magic: In a medium bowl, whisk together the fresh coriander, olive oil, honey, a pinch of salt, and the juice of one lime.

  3. Combine and Toss: Place grated carrots to the bowl, add the crumbled feta cheese, and toss until all the carrot is coated in the dressing.

  4. Serve with Style: Add sliced jalapeños if you need a heat/chilli kick.
